A perfect beef meatballs recipe for beginners. Rolled oats are processed into the meal with salt and pepper and onion flakes, then combined with milk and ground beef so form the meatballs. Sear them in a no-stick pan and put them into the Instant Pot to finish cooking with the sauce.

Ingredients

• 400 grams ground beef (14.0 oz)
• 3/4 cup of rolled oats
• 2 tablespoons onion flakes
• 1⁄2 cup of milk
• 1 egg
• A pinch of salt and pepper to taste
• 2 tablespoons coconut oil
SAUCE
• 1 tablespoon brown sugar
• 1/2 cup tomato sauce
• 1/2 cup chopped crushed tomatoes
• 1 cup of beef broth
• 1/4 cup hickory smoke barbecue sauce
• 1⁄2 tsp salt

• 1⁄2 tsp freshly ground black pepper

Preparation

1. In a food processor, blend the rolled oats, onion flakes, salt and pepper. Process until the oat resembles a coarse meal. Set aside.
2. In a bowl, whisk the milk and the egg. Break up the ground beef with your fingers. Add the ground beef to the egg and milk mixture. Mix well. Then, add the oatmeal. Add more milk if the mixture is too dry. Form the beef mixture into 1-inch balls or approximately the size of a golf ball.
3. Make the sauce. In a bowl, whisk the brown sugar, tomato sauce, crushed tomatoes, hickory smoke barbecue sauce, beef broth, salt, and pepper.
4. In the Instant Pot set to sauté, heat 2 tablespoons of coconut oil. You may us olive oil, but personally, I prefer coconut oil because our body processes and turns coconut oil into energy faster than other vegetable oil.
5. Once the oil is hot, sear the meatballs, turning them occasionally to prevent burning, until the outer part forms golden brown crusts.
6. Add the sauce into the pot.
7. Close the lid and cook on low pressure for 30 minutes.
8. Let the pressure out via quick release.
9. Serve the meatball on top of a mashed potato, baked potato, boiled pasta or steamed vegetables.

Cooking Tips

Make the meatballs with other types of ground meat, such as
turkey or chicken. White meat is more watery, so consider
reducing the amount of liquid you use.
